Is blurring enough to protect identity?

With a strong setting, yes for practical purposes: features are destroyed, not hidden. Also remove metadata if the photo carries a location or a name.

Can I blur several faces?

Yes. Click add region for each one. Regions can overlap and be resized independently.

Does it work on screenshots and documents?

Yes. Use pixelate for text such as names, addresses and account numbers; it is easier to read as an intentional redaction.
